PROJECT 02
Black tomatoes.
Black tomatoes not only look particularly beautiful, they are proven to be even healthier than red tomatoes. The black color is caused by plant pigments, which are summarized under the term anthocyanins. These can exist in different forms and have the function of protecting the plant from cold stress and/or UV radiation.
In vitro has been shown that anthocyanins have an unusually high antioxidant effect. They can bind free radicals and thus protect lipids, hydrates and DNA from damage.
